I'm old, diabetic and more than a bit of a curmudgeon. Still and all I can put together a seriously tasty and healthy loaf of bread  The Life And Times Of Brian Waddington


  1. in a mixing bowl: 3 1/2 cups flour, 1 teaspoon salt, 2 tablespoons Chia seeds, 2 1/4 teaspoons dry yeast, 3 tablespoons dried milk
  2.  mix in a mix master
  3. combine 1 tablespoon olive oil, 3 eggs and enough warm water to make up 1 1/4 cups fluid, whisk. (you might need a little more)
  4. using the dough hook at low speed add the fluids.
  5. knead for 10 (give or take) minutes.
  6. adding a little olive oil to your hands shape the dough into a ball, cover and let rest for 10 minutes.
  7. warm oven 
  8. shape the dough in a pan, cover and place in warm oven for 1 1/2 hours
  9. bake at 450 for about 20 minutes. 
  10. When you tap it and it sounds hollow it's done.
  11. IF YOU USE AN OVEN WITH A BAKE SETTING USE IT.
