Aug 28, 2024   Worth the wait!    Hi, it’s not that baking sourdough bread chains you within the kitchen. But this isn’t instant coffee.    It can take weeks to get your starter started. After which there is at least weekly maintenance.    The baking process requires:  A 45 minute rest after the first mixing and kneading.  Kneading and  then a 3  ½ hour first rise.  More kneading and final adjustment of the  texture of the dough.  The final 1 hour rise.  15 minutes baking with the dutch oven covered.  30 minutes baking with the dutch oven uncovered.  Then, as the bread continues to bake out of the oven you need to wait 2 hours or so, for the loaf to cool.   To be succinct, starting at 09:00 means fresh bread for dinner. Personally I find that this type of effort comes easier when I’m exerting myself for the ones I love.  If I was a saint I don’t suppose I’d make the distinction between loved and not loved.
